    Activities in cutting plants 

    Reception of raw materials, accessory ingredients and packaging material

    This means the reception of raw materials in the broadest sense, for the production of fresh meat, i.e. for example: packaging gases (pre-mix), carcasses, meat, organs and packaging and labeling material.  

    Primary storage

    This means the storage of the products received in accordance with the supplier's requirements (for example: store in a dry place, in a fridge or freezer). The raw materials can be both packaged and non-packaged.

    Production

    This includes all the operations involving the preparation of fresh meat, organs and by-products of animal origin for consumption or use.
    Boning is also part of the so-called preparation phase. It includes the removal of the bones, cartilage and tendons (if necessary), the breaking up into pieces or dissection and the removal of excess fat and rinds.

    Final storage

    This includes the storage of the finished products (dry, refrigerated or frozen storage). The products can be both packaged and non-packaged.

    Packaging and labeling of the finished product

    The packaging includes the operations carried out on the non-packaged finished product so that it does not entail additional risks during the distribution. The labeling includes adding a label on the product to mention the required details as well as commercial information. 

    (Refrigerated) warehousing and distribution (Logistics)

    This includes the storage of the labeled finished product in the company itself, its loading, its transport in the company's own vehicles and its delivery to the customer to whom it will be invoiced or its removal by a carrier who will take over the subsequent distribution.

    Activities in the meat industry (meat preparations and products) 

    Reception of raw materials, accessory ingredients and packaging material

    This means the reception of raw materials in the broadest sense, for the production of meat preparations and meat products.

    Primary storage

    This means the storage of the products received in accordance with the supplier's requirements (for example: store in a dry place, in a fridge or freezer). The raw materials can be both packaged and non-packaged.

    Preparation of the raw materials

     This includes all the operations which must be carried out on the raw materials before the production phase itself.
    Boning is also part of the so-called preparation phase. It includes the removal of the bones, cartilage and tendons (if necessary), the breaking up into pieces or dissection and the removal of excess fat and rinds.

    Production of (fresh) meat preparations

    This includes, amongst others, chopping, marinating, seasoning, coating in bread crumbs, tying up, skewering and casing fresh meat, as well as a combination of these processes.
    After this phase comes a (fast) cooling or freezing phase, depending on the production method used. 

    Production of meat products 

    This includes cooking, drying or fermenting the products, as well as a combination of these processes. 

    After this phase comes a (fast) cooling, demoulding and/or finishing phase, depending on the production method used.

    Final storage 

    This includes the storage of the finished products (dry, refrigerated or frozen storage). The products can be both packaged and non-packaged.

    Packaging and labeling of the finished product

    The packaging includes the operations carried out on the non-packaged finished product in order to wrap it (possibly after pre-slicing, placing under vacuum or adding gas and closing) so that it does not entail additional risks during the distribution
    The labeling includes adding a label on the product to mention the required details as well as commercial information. 

    (Refrigerated) warehousing and distribution (Logistics) 

    This includes the storage of the labeled finished product in the company itself, its loading, its transport in the company's own vehicles and its delivery to the customer to whom it will be invoiced or its removal by a carrier who will take over the subsequent distribution.

    Activities in slaughterhouses for ungulates, poultry and rabbits

    Reception of living animals, slaughter declaration, unloading and ante-mortem inspection

    This means the reception of living animals: pigs, cattle, calves, sheep, goats, equidae, poultry and rabbits.

    Primary storage, cleaning and disinfection of animal trucks and boxes

    This means the period when the transported animals temporarily rest in a stable. The animals can be both approved and quarantined animals.
    In the case of poultry or rabbits, where the animals are transported in boxes, these are brought directly to the slaughter line (possibly via a conveyor belt) where they are hooked.
    After being unloaded, the trucks and boxes in which the animals were transported go to the specially equipped washing station, where they are washed and disinfected before leaving the slaughterhouse, in accordance with the prescribed procedure. 

    Slaughter process (dirty part)

    This includes all the operations which must be carried out during the actual slaughter phase, ie from the driving to the place of slaughter, the stunning, the sticking, to the cleaning of the carcass or the removal of the animal's skin/feathers.  

    End of the slaughter process (clean part)

    This includes all the operations (including the post mortem inspection) in which the carcass is separated into offal (cat. 1-2-3), red and white organs, carcasses and parts thereof. Then come the stamping and / or labeling, weighing and classification.
    These operations also include the treatment and salting of the white organs, for example the intestines.  

    Packaging and labeling of the finished product (only in the case of poultry or rabbits) 

    The packaging includes the operations carried out on the non-packaged finished product so that it does not entail additional risks during the distribution.
    The labeling includes adding a label on the product to mention the required details as well as commercial information. 

    (Refrigerated) warehousing and distribution (Logistics) 

    This includes the storage of the labeled finished product in a cold room until the temperature prescribed by law (between 0-7° C) is reached. The products stored can be half carcasses, quarters / parts thereof, or by-products of animal origin.
    The distribution includes the loading, the transport in the company's own vehicles and the delivery to the customer to whom the product will be invoiced or its removal by a carrier who will take over the subsequent distribution.
